Gluten Free Cookies

Since realizing the extent of Mom’s gluten allergy trying to experiment and find decent gluten free treats have been hit and miss. Sometimes they turn out great. Sometimes they are an utter fail. These cookies however are an enthusiastic A+++



Gluten Free One Cup of Everything Cookies (Adapted from The Best of Bridge)

  • 1 cup of margarine
  • 1 cup brown sugar (the original recipe called for 1 cup of both white and brown sugar but we like the cookies a little less tooth achingly sweet)
  • 3 eggs
  • 1 cup peanut butter
  • 1 cup coconut
  • 1 cup chocolate chips
  • 1 cup quinoa flour
  • 1 TBSP baking soda (recipe title  lies!!)
  • 1 cup gluten free oatmeal
  • 1 cup raisins
  • 1 cup nuts (pecan, walnuts…we used hazelnuts)

Preheat oven to 350 F. Beat margarine, sugar, eggs and peanut butter until creamy. Add remaining ingredients and mix well. Drop by spoonfuls on cookie sheet and bake for 10 minutes. Makes lots. Since they have less sugar in them you need to press them down a little before you bake them.
