Busy Sunday!!!

I love it when I manage to get a lot accomplished in the morning and then have my afternoon free to do whatever I want!

Today I am going over to a friends for a knitting/crafting day. My plan is to work on this pattern

So that is what I will be doing this afternoon. Nice and relaxing.

I decided that I would use what I had in the house to take over snackies this afternoon. So homemade Hummus and veggies it is. I thought I would share my hummus recipe with you!

Kim’s Yummy Hummus

  • 1 can chickpeas (drained and rinsed)
  • 3 tbsp tahini
  • Cumin (to taste but at least 1 tsp)
  • 3-4 tbsp lemon juice
  • 1/2 cup veggie broth
  • 2 garlic cloves
  • 2 tsp Tabasco sauce
  • cilantro to taste

I simply throw everything into the food processor and let it mix until it is nice and creamy. I am not super concerned with a few little chunkies but that’s just me. Some people are crazy and peel the chickpeas. Hey if you want to do that, have at ‘er, but I think it is a bit retentive.

Let it sit at room temp for at least an hour to let the flavours blend. If you refrigerate make sure you serve at room temp. I cut up a bunch of veggies for it. Do you like my fancy pants bowl. It is a piece of Blue Mountain Pottery that Mom has had forever…now I need to knock on some wood so I don’t break it!

I also made a wheat free cheese cake but my picture was fuzzy so I will spare your eyes the horror! Basically instead of using graham crackers for the crust you process some nuts instead. Pretty yummy. Today I used walnuts cause it is what I had on hand.

I also did not feel like going for the ritualistic 5k walk so while I popped Lucy on the treadmill for 45 minutes I made 4 books for my life-skills students to start making journals next week. They are modified students and I have them on a daily basis looking through magazines and ripping out pictures so I thought that I would have them create a journal that they can draw and paint in.

 I have a binding machine and I used a heavier board for the outside of the book and then the pages inside are a cardstock that will hold up to a little abuse.

I have also been playing with creating little images on scrap wood. I doodle the design on the board and then paint it. Then I spend a bit of time drawing different patterns onto it. The final step will be to varnish it so that the doodle is shiny and the wood will remain weathered and cool looking.

I’m not quite finished this one but I am pretty happy with the results!
